These are good, but I think I should give up the idea of making a coffee cake muffin and just make a regular coffee cake, which is easier to me. I hate putting that struedel on the top, it gets so messy. These ended up looking pale and not that pretty, so I probably would not make again.

Hi. I just made these and have to agree with you, I should have just made a normal coffee cake, or I need to invest in larger muffin tins. The streusel didn't 'stick' to the top as well as I would have liked and is messy, as you mentioned. My batter seemed very dry as well prior to scooping into the muffin liners. In any case, thanks for sharing your results.
