These are pretty good, although not super easy to make. But you can bread ahead, so these might be fun to make for casual entertaining.

I don't have a comment on your onion rings per se, I just wanted to let you know that your blog has an audience. I love your blog--the pictures, commentary, and grading are great. I am a huge Cook's Illustrated fan, so I like that many/most of your recipes come from there.
