This was very good and fairly easy to make. I think I liked it better than an earlier tortilla pie recipe from an early Everyday Foods. It makes and attractive meal, so might be good for entertaining.

Empanadas

I usually make a half recipe and try to get 5 or 6 empanadas instead of 4. It works pretty well. I always have extra filling leftover, which is very tasty on its own or in a tortilla. A shortcut is to use some of the petite diced onions with chiles, instead of chopping up jalapenos.
